Which tequila to avoid?

Avoid any bottle that doesn't say "100% agave." Without it, the tequila is a mixto, which can be made with up to 49% other sugars. Also be wary of "gold" tequila, which is often a mixto colored with caramel, and of bottles with no NOM number, which tells you the distillery. Very cheap bottles and novelty shot-style tequilas are more likely to be mixtos than anything made for sipping.

Additives are another watch-out. Regulations allow small amounts of caramel color, oak extract, glycerin and sugar syrup in tequila, so smoothness doesn't always come from aging. Read which NOM tequila is considered the best to learn how to check the distillery, and what are the four grades of tequila to decode the rest of the label. TROPA Reposado is 100% agave, aged in American oak.
