NOM 1123 is Tequila Cascahuín, a family distillery in El Arenal, Jalisco, in the lowland Valles region. The Rosales family has run it for four generations, since 1904, and it is known for traditional methods: brick ovens, tahona crushing and pot-still distillation. Besides its own Cascahuín line, the distillery produces Siembra Valles, Wild Common, Montagave and ArteNOM Selección de 1123.
Cascahuín Añejo placed fifth in our best sipping tequila ranking, where it outscored us on production integrity. Lowland tequilas like these lean earthy and peppery, while highland agave tends to be sweeter and softer, as our types of tequila guide explains. TROPA Reposado comes from the highlands, produced at NOM 1412
